Pumpkin flavored everything is every where right now. You can’t escape it. From the coffee shops to the bakery–it is the season! As the leaves change color and the wind picks up, I always find myself reaching for a warm bowl of goodness. I also enjoy my hair blowing in the wind but that’s a story for another day! lol.

Pumpkins are a great source of beta carotene, vitamin C, vitamin E, iron and folate. Get comfy with a bowl of pumpkin soup and strengthen your immune system at the same time!
We recently spent the day walking through a pumpkin patch which got me thinking about making soup. I decided to try adding coconut because I knew it would add a nice yummy and creamy texture to it. I am a huge soup fan and I love that you can make soup with any kind of beans or even potatoes.
This soup recipe is really easy. I am using coconut milk but feel free to remix the recipe. Oat milk and almond milk are fine if coconut isn’t your thing. Just remember to use pumpkin puree and not the pumpkin used to make pies. That one has sugar in it that would not give you the savory taste you are looking for.
Pumpkin is Good for You

Did you know that this veggie is actually considered a fruit? It’s in the squash family and it is a big winner in the fiber category. Fiber helps us feel satisfied and you can get about 7 grams of fiber from one cup. That’s important as it can mean feeling full without feeling weighed down.
You should know that it’s also low in calories and an excellent source of beta-carotene. That beautiful orange color means pumpkin is high in vitamin c and potassium with a ton of antioxidants. It is also low in sodium, cholesterol and fat. Yass!

How To Store Your Pumpkin Vegan Soup
Meal prep is made easy when you make your batch of soup and save it to enjoy for weeks to come. Choose a glass food storage container or several and store it right in the freezer. You can even pour your soup into a large ice cube tray and pop a few in a saucepan to heat up whenever you are in the mood.

Easy Vegan Pumpkin Soup Recipe
Ingredients
- One 15 ounce can of pumpkin puree (Don’t use the one for pies)
- 8oz vegetable broth
- 1/2 cup of coconut cream
- 1 tsp of cinnamon
- 1/2 tsp of garlic powder (or minced)
- 1 tsp of ginger (minced or powder)
- 1/2 tsp of cumin
Instructions
- Add all ingredients to a saucepan and stir and cook on medium for 15-20 minutes. That’s it! Garnish with your choice of coconut cream and/or fresh herbs like basil, parsley or cilantro.
