Creamy Vegan Tomato Soup
Ingredients
- Ingredients
- 8 Tomatoes (Sliced in Half)
- 1/2 cup of coconut milk
- 1/2 cup of water
- 1/4 tsp salt, pepper, basil, garlic
Instructions
- Preheat the oven to 350°. Prepare a baking sheet with parchment paper or aluminum foil.
- Slice tomatoes in half and roast them in the oven for 20-25 minutes. Remove from the oven and let them cool off.
- Once they cool off, peel the skin and add the tomatoes to your blender.
- Add coconut cream and seasonings. Mix well.
- Transfer your soup mixture to a sauce pan and heat at least 5 minutes. You can also heat your soup in the microwave. Top with parsley or basil, serve with your favorite cracker, bread or toast.
