When I first starting learning about whole foods, I didn’t understand how much nutritional value was available to me. I would have never guessed that my plate would not include an animal protein. Once I started hanging out with vegans and vegetarians, I learned that there were so many ways to get protein from plants.
Chickpeas, Black Beans, Broccoli and Avocado often come to mind when thinking of vegetables that are high in protein. Ingredients
- 2 sweet potatoes-cubed
- 2 purple yams -cubed
- 2 onions- 1/2 inch slices
- 2 cups Brussels Sprouts- cut in half
- 8-10 rainbow carrots or traditional -peeled
- 2 apples -cored, peeled and sliced
Instructions
- Pre-heat your oven to 375° and prep your cookie sheet with parchment paper or aluminum foil. Your choice. Note, this recipe does not use oil.
- Gather all of your vegetables. Rinse, cube and slice everything and add to your cookie sheet.
- Bake for 40-45 minutes
