Oven Roasted Tomatoes and Peppers: A Perfect Pair
Campari Tomatoes
There are so many kinds of tomatoes available to us. For this oven roasted recipe, I chose the campari tomato. I like them because they are larger than a cherry tomato but not as large as the plum or roma. They are high in vitamin A and C. Tomatoes are also an excellent source of cancer fighting lycopene and beta carotene. But for me, I just love that when these tomatoes hit the oven, they seem to get even sweeter.
Red, Orange and Yellow Peppers
Did you know that peppers start out as green? We get the color variation based their type and how long they stay on the vine. Red, orange and yellow peppers are more expensive than green peppers because they take longer to harvest. All of that beautiful color lets you know that you are getting more beta-carotene, vitamin A and vitamin C. They are the perfect partner for this oven roasted recipe.

- Lycopene: Protects our cells from damage and supports heart health

Oven Roasted Tomatoes and Peppers
Ingredients
- 2 cups tomatoes – cut into quarters
- 2 cups peppers- sliced
- 2 tbs- olive oil
- 1/2 tsp salt and pepper to taste
Instructions
- Set the oven to 400 degrees. Prepare a cookie sheet with foil or parchment paper.
- Slice tomatoes in half or quarters. Slice peppers. Drizzle olive oil and add salt/pepper to taste. Toss until well coated. Bake for 20 minutes.
