Pumpkins are a great source of beta carotene, vitamin C, vitamin E, iron and folate. Get comfy with a bowl of pumpkin soup and strengthen your immune system at the same time!

We recently spent the day walking through a family farm which got me thinking about making soup. I decided to try adding coconut because I knew it would add a nice yummy and creamy texture to it. I am a huge soup fan and I love that you can make soup with any kind of beans or even potatoes.

This soup recipe is really easy. I am using coconut milk but feel free to remix the recipe. Oat milk and almond milk are fine if coconut isn’t your thing. Just remember to use pumpkin puree and not the pumpkin used to make pies. That one has sugar in it that would not give you the savory taste you are looking for.

Did you know that this veggie is actually considered a fruit? It’s in the squash family and it is a big winner in the fiber category. Fiber helps us feel satisfied and you can get about 7 grams of fiber from one cup. That’s important as it can mean feeling full without feeling weighed down.

You should know that it’s also low in calories and an excellent source of beta-carotene. That beautiful orange color means pumpkin is high in vitamin c and potassium with a ton of antioxidants. It is also low in sodium, cholesterol and fat. Yass!
