Coconut Quinoa Oatmeal is a mouthful. Luckily it’s a mouthful of healthy and nutritious yummy. And yes! It’s insanely easy to make right in your own kitchen. Packed with all the fiber and nutrients you need to get the day started. I hated oatmeal as a kid. It was always presented as soupy or too mushy. No matter the presentation, I just couldn’t stand it.

A New Breakfast

Leaning into a mostly plants lifestyle expanded my breakfast horizons. I spent years choosing egg and cheese on a roll or pancakes with bacon. Without a meat or dairy option, I had to get creative. It was time to get excited about the concept of a new breakfast. My new morning options now include chia seeds, hemp seeds and of course quinoa. I just had to open my mind to the possibilities and let the magic happen.

All Grown Up

Now that I’m all grown up, I decided to re-introduce myself to the breakfast icon known as oatmeal. I used to grab a cup of coconut quinoa oatmeal on my way to the office and I loved it. The creaminess of the coconut and the blended quinoa and oatmeal made for a hearty first meal of the day. No one ever made it for me like that! It was time to tackle my fears. Yes, I was ready to actually make oatmeal. Not just any oatmeal, but the very version that I fell in love with on my way to work.

The Trio: Coconut Cream, Oatmeal and Quinoa

Ingredients

  • One can of coconut cream- 13.5 ounces
  • 1/2 cup of water
  • One cup of quinoa (I’m using tri-color)
  • 1 cup of rolled oats
  • A dash of honey (1/2-1 tsp)

The Process

Add all of the ingredients to a medium saucepan and bring to a boil. Simmer covered for 20 minutes and stir. Cook until it reaches a consistency that you like.
